I love bull riding. I love watching the pros on tv an I love watching it in person even more! And it just so happens that I get to watch it in person two nights in a row! A friend of mines brother is putting on an event and I can't wait! But I got asked to make 100 cupcakes for each night...for the hospitality tent. So on these two days when it is actually hot here in the PNW I am in the kitchen with two 350 degree ovens. But it will all be worth it because I get to watch two nights of bull riding!

a productive day
Today I have baked 2 cakes (so far...a third to come) a batch of chocolate chip cookies and a batch of cupcakes. Its the end of the school year and there are parties to be had a school. But that is all I have gotten done. I needed to get laundry done, clean and just get organized. Well I have tomorrow morning and all weekend. I also needed to get the dogs out to the beach...
In other news I got my official teaching certificate in the mail yesterday! Hooray for being officially official!!!
Definitely looking forward to the paycheck at the end of the month.
Time to go check the cake.

Today...
I have completed all of the requirements to get my degree and y teaching certificate. Now I wait for two things. 1. Graduation-not until the 14th. 2.My Certificate to be effective-MONDAY!
So today I turned in my application to be a substitute teacher. I know that the district has needed more subs recently so I am hopeful that I will be kept busy. But in the process that means I have two full week days with NOTHING going on. I have discovered recently that I am TERRIBLE at having nothing to do. I can't sit around and twiddle my thumbs. Today, I watched the dog sleep. It has been a LONG day. I have read a LOT of blogs. I think tomorrow I will bake. There are so many cupcake recipes that I want to try. At least that will keep me busy in the morning.
Until then here is a not very clear picture of my pup Napili and my moms dog Fiona who turns 6 today!

Harvey Wallbanger Cupcakes!
Here is the recipe for my very favorite cupcakes. I don't have a picture at the moment but I promise they will be a hit. I take them to all sorts of things and they always disappear. I usually make them in Mini form because it's just easier.
Ingredients:
1 Box Yellow Cake mix
1 Small box instant vanilla pudding
4 eggs
1/2 Cup oil
3/4 Cup Orange Juice (I use no pulp)
1/4 Cup Vodka
1/4 Cup Galliano
Heat Oven to 350
(or if you have one-a mini cupcake maker thats what I use)
Mix all ingredients together in Large Bowl until there are no more lumps
Fill cupcake tins and bake until a toothpick can be inserted and come out clean.
On top-Mix some powdered sugar, orange juice and if you would like a tiny bit of vodka to a thin consistency and put a little on top of the cupcakes when they are still warm-it will work like a glaze.
This batter can also be used as a cake in a bundt pan in which you should grease and flower the pan then bake for 35-40 minutes. Depending on the oven. Then pour the glaze over the top and sprinkle with powdered sugar.
This cake will be moist and melt in your mouth. ENJOY!
Updated (12/20/11): This cake is traditionally made in a Bundt pan and covered with a glaze of Orange juice and powdered sugar (and I usually add a little bit of Vodka to it-just a tiny bit) It is ALWAYS a hit! I linked up here also.
